Kumbilappam aka chakka kumbulappam, chakka appam, vazhanayappam, theraliyappam is an authentic snack food of kerala. The soft kumbilappam can be eaten as a filling breakfast or an evening snack. Take some mixture and stuff it inside the conical shaped leaf.

This delicious and soft kumbilappam is made using ethappazham or big bananas that are commonly seen in our households. Take each bay leaf and make cone out of it. Finely grind the raw rice in a mixer with low content of water.

Especially Bay Leaf Has A Special Aroma.

Also as it’s made in fresh edana ila/ vazhana ila (bay leaves) that also gives a special aroma. 1 cup jaggery (shaved) ½ cup water. If fresh bay leaves are not available this recipe can be made in dried bay leaves or adding the dried leaves in the steaming water.

Banana Leaves/ Aluminum Foil Are Also Can Be Used If Bay Leaves Are Not Available.

Add in the mashed bananas, grated coconut, cardamom powder and combine well without any lumps. In a large bowl, add in the roasted rice flour, grated jaggery and mix well. It is healthy, too, as the snack is cooked in steam.
